We use way too much of this delicious coconut
I bought this coconut to make what we call "Magic Bars". My family loves these bars and they are a staple at parties and family get-togethers. I copied and pasted the recipe as I tried to make a link and it was denied. I usually have to end up making 2 pans so there are actually some left for our guests because certain people who shall remain unnamed like to eat my food that is meant for guests before the guests get the food and I am left scrambling to make something else. These are the bars that my family will do that. This coconut perfect for my magic bars. They add just the right amount of contrast to the chocolate/butterscotch chips to give it that "mmmmmmmm" factor. It is not too sweet, but add enough flavor to contrast the nuts (use pecans) and chips. Perfect!Ingredients:2 cups graham cracker crumbsOne 14-ounce can sweetened condensed milk1 cup semisweet chocolate chips1 cup butterscotch or peanut butter chips1 cup pecan pieces, roughly chopped1 cup shredded, sweetened coconutInstructions:Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.Combine the melted butter and graham cracker crumbs in a small bowl with your hands (the mixture should hold together when squeezed). Pour the mixture into the prepared dish and press it into the bottom in an even layer, using the bottom of a measuring cup to help. Pour the sweetened condensed milk over the crumbs, then sprinkle the chocolate chips, butterscotch chips, pecans and coconut over the milk.Bake until the sides are golden brown and begin to pull away from the dish, 30 to 40 minutes. Let cool completely in the dish. Cut into 48 small pieces (they are rich). The cookies can be refrigerated in an airtight container for up to 3 days.But seriously, who will cut this into 48 small pieces? In our house they get cut into about 20-24 squares and scarfed down in about 10 minutes. No need to store in refrigerator if they are already gone. We love these bars and this coconut is right for the recipe!My hubby uses this on his plain Greek yogurt as well and loves it. I also made homemade granola and used this and it turned out delicious. This coconut is a great deal.

Great for baking
This is natural grated coconut, without heavy preservatives or added sugar, so it is not like the stuff you buy at the supermarket. It is just what I was looking for, and it has a great taste in baked goods - it really holds its own in cookies, cakes, and breads. That said, it’s not so great when it is used raw. It tends to dry out, and can be like chewing sawdust. I have this problem with all grated coconut, but these flakes are quite small, which makes them dry out more quickly. I used them on the outside of a cake and the texture was horrible.
